There is a toggle on the menu screen that you select to switch from Normal Mode to Master Mode. So yeah, in there you have to folders, "local" and "remote", plus the file "remotecache.vdf", copy the two folders to whatever backup place you want. Now to start fresh you need to delete the save data withing the menu of the game. Then to load your old save just copy the two folders back to their original place and overwrite everything.A separate save slot is good news. Yes, you have to go through some extra work outside the game, but you can technically have multiple saves with BotW as well. Why on Earth they thought it would be a good design choice to not give us multiple save files is beyond me.

Every switch profile gets its own set of saves, so you can treat the different profiles as the different save-slots like prior games (except you can have far more than three).The point of multiple saves is to have a save frozen from a point you want to start at (could be past the tutorial, could be past the 2nd dungeon etc.), leaving that save untouched while playing from a second save from that one.
