If you wanted to max out pyromancy (40/40 int faith) you could lower the vigor and endurance a bit, could also swap around Intelligence and Faith stats if you prefer miracles. Also, give the witche's locks a try if you're doing a pyro build.

Cons: Generally for a Pyromancer I would recommend any weapons with reasonably low STR and DEX requirements that get good scaling when infused. In your case, given you plan to level DEX a reasonable amount, some specific weapons I recommend are the Astora Greatsword, Gottard Twinswords, Dagger, Great Corvian Scythe, Scimitar, Demon Scar, Claymore ... Sage Ring. The Witch's and Great Swamp Ring are needed to increase pyromancy damage. The Sage Ring is also essential to increase how fast you can cast your pyromancy spells. The last ring is up to you, but I prefer the Silver Serpent Ring for increased souls. As for armor, you can use whatever you'd like.Anything involving magic is hugely powerful in PvE first of all. Pyromancy scales both with intelligence and faith equally so your build should be something like 30 Int and 30 Faith.Also the Infusions that scale better with those stats are chaos and dark.If you're going for pve I would usee chaos for most areas because many enemies are weak to fire.For PvP dark is the way to go because most players have low dark resistance.

I'm casually playing through right now and used a pyro-knight build. I prefer faster swinging weapons, so I went with a sunlight straight sword. Fireball is nice to just keep range and send it. Black Flame and Great Combustion for dumping quick damage up close as well. I kept it PVE sensible though, so I capped my END at 40, didn't choose to go ...
