[SOLVED] Inserted a working Verizon sim from a phone currently on Verizon (not straight talk) into the note 8 and it must have sorted out whatever the glitch was. Removed the Verizon sim and replaced it with the straight talk sim and restarted. Changed the apn settings back to straight talk and viola. Mms works.

Judging by the activity here, I will assume that most are on the big 4 carriers. It's a shame that mvno's aren't more mainstream. Mvno is 'mobile virtual network operator' meaning companies who resell the big 4's services, straight talk just one of maybe 20 to do so. They resell cheaper with usually more data than their parent network.
